The Chopped PGI Piedmont hazelnuts from the Langhe are obtained by crushing the roasted hazelnuts by means of rollers set at a specific height, which determines the final grain size of the product.
The hazelnuts to be used as chopped hazelnuts are shelled and roasted on request only when an order is placed to ensure maximum freshness.
A computerised air suspension roaster allows a homogeneous and thorough roasting; the kernels are cooled only when the hazelnuts have internally reached the temperature that corresponds to the desired degree of roasting.
At the end of the processing cycle, the chopped hazelnuts are vacuum packed in order to preserve all of the properties.
