The hazelnuts intended to be used in flour production are shelled and roasted on request only when an order is placed to ensure maximum freshness.
A computerised air suspension roaster allows a homogeneous and thorough roasting; the kernels are cooled only when the hazelnuts have internally reached the temperature that corresponds to the desired degree of roasting.
At the end of the processing cycle, the flour is vacuum packed in order to preserve all of the properties.
